Peanut Butter Pie
Every good meal has a desert at the end (or in my husband's case, in the beginning). Grandmother always has desert anytime we come over, often times she just has a feeling that one of us will be by, and has just made something that afternoon. My favorite of all of her deserts must be her peanut butter pie. One of the best things about this recipe is it is very low fat/sugar/etc. but you can't tell the difference (not even Gary).
1 Cup of Splenda
1 12 oz container of Light Cool Whip
1/3 Cup of Peanut Butter (chunky, reduced caleries)
1 3 oz package of Fat Free Cream Cheese
1 Reduced Fat Graham Cracker Crust
Mix cream cheese and peanut butter together, add splenda and cool whip until mixed well. Pour into pie shell and chill. (Grandmother's note: It's better to fix it the day or night before, to let it chill a really long time. You can also sprinkle crushed graham cracker crumbs on top of pie, and/or sprinkly chocolate chunks in or on top of pie.)
